Chocolate Mint Dreams Recipe

Since chocolate-mint is my favorite flavor combination, I sometimes eat these dainty shortbread-like treats by the dozen. But I manage to save some for guests because they make my cookie trays look so elegant. -Anne Revers Omaha, Nebraska
TOTAL TIME: Prep: 30 min. Bake: 5 min./batch + cooling YIELD:36 servings


  • 3/4 cup butter, softened
  • 1/2 cup confectioners' sugar
  • 2 ounces unsweetened chocolate, melted and cooled
  • 1/4 teaspoon peppermint extract
  • 1-1/2 cups all-purpose flour
  • 1 cup miniature semisweet chocolate chips
  • ICING:
  • 2 tablespoons butter, softened
  • 1 cup confectioners' sugar
  • 1/4 teaspoon peppermint extract
  • 1 to 2 tablespoons 2% milk
  • 1 to 2 drops green food coloring, optional
  • 1/2 cup semisweet chocolate chips
  • 1/2 teaspoon shortening


  • 1. Preheat oven to 375°. Cream butter and confectioners' sugar until light and fluffy. Beat in cooled chocolate and extract. Gradually beat in flour. Stir in chocolate chips. (Dough will be soft.)
  • 2. Drop dough by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until firm, 5-7 minutes. Cool on pans 2 minutes. Remove to wire racks to cool completely.
  • 3. For icing, mix butter, confectioners' sugar, extract and enough milk to achieve desired consistency. If desired, tint green with food coloring. Spoon over cookies.
  • 4. In a microwave, melt chocolate chips and shortening; stir until smooth. Drizzle over tops. Yield: about 3 dozen.

"I didn't enjoy these cookies. The texture of the cookie was dry and odd. I think because the cookie lacked any eggs or leavener. The dough was very dry as I was adding the last part of the flour to the mix, so I needed about 2 tsp of milk in order to be able to mix it. There was so little dough that I couldn't add 1 cup of chocolate chips; I was only able to add a half cup. I agree with another reviewer when she said that the cookies need to be flattened before baking. I used a cookie scoop and the cookies came out of the oven in the same ball shape that they were put in. Using a tablespoon cookie scoop, I only was able to make 26.5 cookies from the single recipe. It was far from the 3 dozen that was reported. I won't be making these again; I have had better."

"I really liked these minty cookies. Everyone that tried them loved them. They do need to be flatted a bit before baking though if you want a smooth top to frost. I had to make a double batch of icing to make it look like the picture. Don't use too much milk in the icing or it gets too thin and won't set well."

"These are one of my family's favorites! The shortbread-like cookies aren't too sweet and have a hint of mint. The minty frosting compliments them so well, and the chocolate glaze makes them gorgeous! They ship well, too."
