Chocolate Mincemeat Bars
What would the holidays be without mincemeat for dessert? Even people who say they don’t care for the taste will be surprised to find they love these tender chocolate bars. —Darlene Berndt, South Bend, Indiana
Total TimePrep: 15 min. Bake: 20 min.
- 1/2 cup shortening
- 1 cup sugar
- 3 large eggs, room temperature
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1-3/4 cups mincemeat
- 2 cups (12 ounces) semisweet chocolate chips
- Confectioners' sugar
- In a large bowl, cream shortening and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Combine flour and baking soda; gradually add to the creamed mixture and mix well. Beat in mincemeat. Stir in chocolate chips.
- Spread into a greased 15x10x1-in. baking pan. Bake at 375° for 15-20 minutes or until dark golden brown. Cool on a wire rack. Cut into bars. Dust with confectioners' sugar.
Freeze option: Freeze cooled bars in freezer containers, separating layers with waxed paper. To use, thaw before serving.

My only change was using 1 tsp. salt. I'd baked by mistake the 350o F. oven tempt. and then saw that the oven tempt. was for 375o F. I'd baked about 30 to 35 minutes on the total time. This recipe is very tasty-unusual, too!
