Ingredients

  • 1/2 cup butter or margarine, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/2 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sour milk*
  • 1/2 cup hot water
  • Frosting of your choice

Directions

In a mixing bowl, cream butter and sugar. Add egg and vanilla. Combine dry ingredients; add to the creamed mixture alternately with milk and water. Mix well. Fill paper-lined muffin cups two-thirds full. Bake at 375° for 12-15 minutes or until a toothpick comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely. Frost cupcakes. Yield: 1 dozen.

"Mixed reviews concerned me, but this is a great recipe. I think anyone who is disappointed with the chocolate taste might consider the brand of cocoa used.

Also, a little bit of strong coffee enhances almost any chocolate recipe."
