Chinese Chicken Salad

Chinese chicken salad is a great dish to make ahead and bring for weekday lunches. Even after the salad is dressed, the cabbage stays crunchy. Add the chow mein noodles just before serving. —Taste of Home Test Kitchen

Ingredients

  • 4 cups coarsely chopped Chinese or napa cabbage
  • 2 cups shredded red cabbage
  • 2 cups shredded cooked chicken
  • 1 cup shredded carrots
  • 4 green onions, chopped
  • 1/4 cup minced fresh cilantro
  • 3 tablespoons canola oil
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • 1 garlic clove, minced
  • 1 teaspoon minced fresh gingerroot
  • 1/4 teaspoon pepper
  • 1 cup crispy chow mein noodles
  • 2 tablespoons sesame seeds, toasted

Directions

  • 1. In a large bowl, combine the first 6 ingredients. In small bowl, whisk oils, vinegar, soy sauce, sugar, garlic, ginger and pepper. Pour over cabbage mixture; toss to coat. Sprinkle with chow mein noodles and sesame seeds.
