“I usually have the ingredients for this great entree on hand, making it ideal for last-minute company or busy days when I don’t know what to make,” writes Ann Torrey from Brattleboro, Virginia. This one’s sure to be a hit!

  • 3/4 pound ground beef
  • 1 cup chopped green pepper
  • 1/3 cup chopped onion

The flavor was very bland. You could taste too much of the tomato sauce. I would definitely beef up the spices in this for sure. I also cooked the rice separately as I've done a recipe like this before and the rice never cooked in the liquid that was left in the pan. Just not enough of it.

This was a quick hearty dish that I will make again. . . I added two cloves of garlic along with the ground beef and veggies and served cornbread on the side. Add red pepper flakes or hot sauce if you want to spice it up a bit. . . Definitely a go-to dish for busy nights!
