Chicken & Egg Noodle Casserole Recipe

Chicken & Egg Noodle Casserole Recipe

A friend and her family went through a really difficult time, and I felt so awful for them. Bringing over this casserole was the one thing I could think of to help them out in a tiny way and let them know I was thinking of them. —Lin Krankel, Oxford, Michigan

"I liked this recipe after adding onion, garlic, celery, mushrooms and some added seasoning per the reviews I read. Peas would be nice for some folks who like peas. The base recipe is perfect"

"To make this a complete meal, we added frozen peas before baking. My husband can't eat spicy or heavily seasoned food, so the sour cream added just enough zip to make this recipe a winner in our home."

"I agree with having to add more spice. But you definately have to add celery."

"Thank you for sharing this recipe and your generous spirit in helping a friend who experienced tragedy. This is wonderful "comfort food"! Added a bit of poultry seasoning and used potato chips as the topping just because they were on hand. Other than that, it was perfect. Others evidently thought so too or it would not have deserved almost 5 stars!!"

"This recipe is tasteless and tastes like mayo with chicken. Thankfully, I tasted the "sauce" before using it or this would have gone in the trash on first bite. I'd list all the things I did to make this more enjoyable but it's basically a whole new recipe (thyme, garlic/onion powder, parsley, shredded cheese, roasted red peppers, other veg etc.) Skip this one. There are far better on TOH."

"Yummy!! I just added onion and garlic but it is still very good without. Couldn't believe how good the buttered ritz cracker topping was. Next time i make my baked macaroni and cheese l will use the buttery cracker topping instead of my usual panko bread crumbs."

"Ok, yes, it was slightly tweaked. I used both cans cream of chicken. Added some dried minced onion & chicken stock base (about 1 Tb of each) and a dash of ground sage. Sprinkled plain Panko on top. Cooked for 20, sprinkled shake cheese & some shredded mozzarella on top, baked for 10 more minutes. DELICIOUS!!! The only other place I cheated was I used chicken pulled from a rotisserie chicken, so that added to the flavor. This is now my go-to comfort food"

"We made this for dinner tonight. We took the suggestions from other reviewers and added the peas, minced onions, garlic pdr and the Bullion. It adapted very well to my gluten free diet using gf noodles, gf cream soup and topped with gf crackers. We consider this a definite keeper recipe. Thank you to all who have reviewed and made suggestions to this recipe."

"This is one of my family favorites. However, instead of using the crackers, I left over crushed potato chips, crushed corn flakes cereal or crushed tortilla chips. Almost any variety will do. Adds a little extra flavor."

"Ratings are based on following the recipe letter for letter but it's often necesary to cook based on what's in your kitchen at the time so, sorry for that! This sounded like a great basic recipe so I gave it a shot with some changes. Sub cream of mushroon for cream of chix and added small can of mushrooms and 1 cup frozen peas. Based on other reviews I also added 2 Tbs dried minced onion, 3/4 tsp garlic powder and 1 Tbs "Better Than Bouillon" roast chix base (eliminate the salt in recipe) and completed recipe as written. This was fast, easy and YUMMY so thx, Lin, for the great basic recipe! Even my husband liked it and my "Grands" will Love it as well! Deserves 5*'s if I can still rate it."

"I modified this recipe by adding broccoli and dried minced onion, and reduced the amount of noodles. I also used seasoned bread crumbs in place of the crackers. It turned out great. Would like to try it again with the crackers on top next time."

"I cut the recipe in half since I was just feeding me and my husband but I used the full amount of crackers and melted butter. I added more salt, pepper, garlic powder and chicken powder. (As everyone has said, It definitely needed more spice.) It was very good. I will make it again."

"I walked into this recipe knowing it was pure comfort food. I agree with the other reviews though that it needed to be more spiced and made as written, is a bit bland. I did add almost twice as many crackers on top, so that was a yummy addition. I would make this again for perhaps a potluck or group dinner, as I think most would enjoy!"
