Chewy Peanut Butter Cookies

"I like to add candy bars to cookie dough for a change of pace," writes Christine Beeman of Horseheads, New York. Crushed Clark bars give a boost of peanut butter and chocolate flavor to these flourless peanut butter cookies. "I took them to work and they were a big hit," she notes.

  • 1/2 cup peanut butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 Clark candy bars (1-3/4 ounces each), crushed


  • In a bowl, combine peanut butter and sugar; beat in egg and vanilla. Stir in candy bars. Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Bake at 325° for 12-15 minutes or until golden brown. Remove to wire racks to cool.

    Very good Kind of like a "granola bar". I think you could add whatever nuts or dried fruit you wanted. I tried chocolate chips and nuts in some.

    I have been making these classic cookies for years. However, the addition of chocolate candy kicks up demand for the quick cookies. Since we love peanut butter I usually add more than the 1/2 cup of peanut butter. Be prepared to make many batches of these cookies!
