Brownies are a common dessert in our household - they're just about the only form of chocolate my husband will eat! I love this version that makes a big batch and has a rich cream-cheese layer in the center.

Ingredients

  • 1/2 cup butter, cubed
  • 4 squares (1 ounce each) unsweetened chocolate
  • 4 eggs
  • 2 cups sugar
  • 2 teaspoons vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1 cup chopped nuts, optional
  • FILLING:
  • 2 packages (8 ounces each) cream cheese, softened
  • 1/2 cup sugar
  • 1 egg
  • 2 teaspoons vanilla extract

Directions

In a small saucepan, melt butter and chocolate over low heat; stir until smooth. Remove from the heat; set aside.
In a large mixing bowl, beat eggs. Gradually add sugar, beating until thick and light lemon-colored. Beat in vanilla. Add flour and mix well. Stir in melted chocolate and nuts if desired (batter will be thick). Spread half of the batter evenly into a greased 13-in. x 9-in. baking pan; set aside.
For filling, in a small mixing bowl, beat cream cheese and sugar until light and fluffy. Add egg and vanilla; mix well. Gently spread over batter. Spoon remaining batter over filling; spread to cover.
Bake at 350° for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Cut into bars. Store in the refrigerator. Yield: 4 dozen.

"They were good,easy to make. But nothing special.If you have ingredient's, and in the mood for a rich dessert,then go for it. It would be better to add a thin layer of raspberry or strawberry preserves on top of the cream cheese,then top with the rest of the chocolate."
