  • 2 cups shredded cheddar cheese
  • 1 can (15-1/4 ounces) whole kernel corn, drained
  • 1 can (14-1/2 ounces) diced tomatoes, drained
  • 1 cup sour cream
  • 2/3 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1/2 cup butter, melted
  • 3 tablespoons sugar
  • 2 tablespoons taco seasoning
  • 2-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Optional toppings: Chopped green onions and minced fresh cilantro


  1. Combine the first 11 ingredients in a greased 3-qt. slow cooker. Cook, covered, on low until a toothpick inserted in the center comes out clean, 4-5 hours. If desired, top with green onions and cilantro.
