Cheesy Slow-Cooked Corn
- 9-1/2 cups (48 ounces) frozen corn
- 11 ounces cream cheese, softened
- 1/4 cup butter, cubed
- 3 tablespoons water
- 3 tablespoons whole milk
- 2 tablespoons sugar
- 6 slices American cheese, cut into small pieces
- 1. In a 4- or 5-qt. slow cooker, combine all ingredients. Cook, covered, on low, until heated through and cheese is melted, 3-4 hours, stirring once.
1 cup: 265 calories, 16g fat (9g saturated fat), 39mg cholesterol, 227mg sodium, 27g carbohydrate (6g sugars, 2g fiber), 7g protein.
Nov 28, 2019My family has made this recipe for years for almost every holiday. It's always a crowd pleaser. We have adapted it slightly from experience. We never add sugar as the corn it's sweet enough. Then add a tsp or two of salt and pepper. I use whole cream instead of milk, and milk in place of water. Usually at the end if it's been cooking a while or we're waiting to eat, more milk will need to be added to keep it creamy. We always make this in the crockpot, although occasionally for dinners I'll do a fast stovetop version. Generally we add 2-4 more slices of American Cheese also and I personally decrease the cream cheese slightly by a few oz. It will forever be one of my favorite recipes ??
Aug 18, 2019I wont give it the 5th star until I taste it. First time making it. Read all the reviews so I added bacon and onion, used cheddar instead of American, ditched the sugar. We are not sweet people. I'll see at the end if I need to add it. Didnt read the comments about milk at end so hopefully my corn won't clump. Honestly I can't see how at only 3 tablespoons of it. So we shall see. Taking it to best friends house today for a BBQ. I know, ballsy right...never tasting it myself but they are besties so no big deal. Really its corn and cheese. How bad can I mess it up! Later!!!

only thing I would change is add some diced onion&a small amount of crispy bacon, other than that this is a really lovely side dish to go with the roast beef&hashbrowns&salad .

Made this as a side for Thanksgiving, it was a huge hit! Used 2 x 26 oz bags of frozen corn, and decreased the cream cheese to one 8 oz pkg, otherwise didn't change anything. Can't count the number of times I was asked for the recipe. :)

Delicious! 1/3 recipe, 2 qt dish (to have room to stir), 40 minutes, covered, at 350. This has ruined canned cream corn for us forever! A pinch of salt to finish.
