Cheesy Slow-Cooked Corn Recipe

My family really likes this creamy, cheesy side dish—and it's so easy to make. Even those who usually don't eat much corn will ask for a second helping. —Mary Ann Truitt, Wichita, Kansas
TOTAL TIME: Prep: 5 min. Cook: 3 hours YIELD:12 servings


  • 9-1/2 cups (48 ounces) frozen corn
  • 11 ounces cream cheese, softened
  • 1/4 cup butter, cubed
  • 3 tablespoons water
  • 3 tablespoons milk
  • 2 tablespoons sugar
  • 6 slices process American cheese, cut into small pieces


  • 1. In a 4- or 5-qt. slow cooker, combine all ingredients. Cook, covered, on low, until heated through and cheese is melted, 3-4 hours, stirring once. Yield: 12 servings.

"I make this every year for Thanksgiving. Everyone loves it. I do not cook it in the slow cooker. I actually put everything together except the corn and heat in the microwave until melted then I add the corn and stir well then add back to the microwave to cook the corn. I then put it in the slow cooker to keep warm during the meal. much faster that way. I actually doubled the milk in mine to make it creamer."

"I cut the recipe in half since I was only cooking for two. It gave us plenty and enough for leftovers. If you like your cheesy corn sweet, then add the sugar. If not, I wouldn't. I only added about 1/4 of the sugar the actual recipe calls for and it was almost too sweet for my taste. I also added some course ground pepper and substituted cheddar for the American cheese. This is a hearty "set it and forget it" type of side dish. I served it with the Berry Delicious Barbeque Recipe (ToH) and it was the perfect compliment."

"Really good - easy too. Don't have a slow cooker so just simmered everything for a while. Also added some canned green chillies and some extra seasoning to make it 'pop' a bit more. Also substituted cheddar for process cheese - process cheese - ICK!"

"This is an all time family favorite! I have made this dish many, many times and always get requests for the recipe. When I take it to pot lucks, I always come home with an empty dish, much to my family's dismay. I do add 1 tsp of salt to the recipe. Also, I find that it is easiest to add the milk last when putting it in the crock pot as it causes the frozen corn to clump together and makes it virtually impossible to stir until it begins to cook awhile later. Enjoy!"
