Caprese Salad Kabobs
Total TimePrep/Total Time: 10 min.
- 24 grape tomatoes
- 12 cherry-size fresh mozzarella cheese balls
- 24 fresh basil leaves
- 2 tablespoons olive oil
- 2 teaspoons balsamic vinegar
- On each of 12 appetizer skewers, alternately thread two tomatoes, one cheese ball and two basil leaves. To serve, whisk together oil and vinegar; drizzle over kabobs.

I loved these - so simple to make and very refreshing. Other members of my family thought they were a little bland and would like more spices. Will definitely make again and hopefully find the right spice combination so we can all enjoy these as much as I did.

Impressive and Tasty. I bumped up the taste by using one of our favorite salad dressings. It was thick enough to cover all of the ingredients. I suggest chilling the salad for a few hours prior to serving. Then use the drizzle right before serving. Great addition to any Buffet Table.Taste of Home Volunteer Editor. I recommend this one and I will make this one again. Its also open for many tweaks. Adding a cube of meat or switching out the cheese.

Not impressed. I think I would marinate things overnite in another "sauce" instead, then put on the skewers.

What if you don't like the taste of basil? Do you think spinach will be good with the balsamic? Thanks

I've made these for several parties and they are always a hit! The perfect appetizer or snack! This recipe is super easy, and you can also make ahead of time (the night before) - just wait to drizzle the balsamic (I used a balsamic glaze since it was thicker and "stuck" better). For the mozzarella, I just got the "pearls" at the store. Someone else mentioned cutting the tomatoes in half too, which is great if you want to make mini skewers and have them "stand up" - you just use a toothpick and have the flat side of the tomato half be your base.

Make these ALL THE TIME!! So good and a quick bite to whip up when having family or friends over.

So refreshing. So good. . I found that halfing the cherry tomatoes and using mozerella pearls (Walmart) made it easier and doubles the recipe.

this one is a great 'take-along' for picnic, outdoor concert, or just 'home and easy on a HOTTER' than HOT day!! LOVE IT!!

These were the perfect side dish for a picnic. Everyone raved about them! I will definitely be making these again as there were no left overs and I want more. I followed the recipe and alternated yellow/red tomatoes.
