Reviews for Caprese Chicken with Bacon
"This is my new favorite chicken dish! It tastes so fresh and is bursting with flavor. The chicken turned out juicy in the oven and prep was easy. The only change I made was to use shredded cheese instead of slices since that's what I had on hand. The combination of chicken, bacon, cheese, basil, and tomato is perfection. It's also a visually appealing dish. I served it with couscous and a salad. This is now on our go-to recipes list."
"This recipe was a hit. Everyone cleaned their plates. This recipe is very easy and perfect for a weeknight dinner or company. I will say I read it wrong and cooked the bacon more than I should have but it worked out fine. It didn't burn in the oven. I used fresh mozzarella but you could use shredded or slices. Definitely a keeper.*Volunteer Field Editor"
"This was simple and delicious! Everyone in our family really enjoyed this recipe. We will make this again soon!"
"I will definitely make this again. Next time I will use sun dried tomatoes. The presentation was company worthy."
"I tried this on a whim since I had all the ingredients. I thought it was juicy and tender. The bacon was a nice touch, but I didn't use as much as the recipe called for since I only had 4 slices. After tasting the recipe as written, I added a bit of balsamic glaze which really heightened all the flavors. Definitely worth a try."
"This was really good after I took the bacon off. I thought the bacon was too overpowering and salty. Also, it didn't taste like caprese with the bacon. Next time I will leave the bacon off. I sliced the tomatoes thick and the cheese as well. I will make it again without the bacon."
"Great to impress guests. Easier to make than it looks in the photo and it is delicious as well. It is now one of our favorites."
"I made this recipe a couple nights ago for my parents and they couldn't stop talking about it, literally! As we were eating it and throughout the rest of the night. This is going on the list of recipes to make very often. I may try using sun dried tomatoes one of the times. And I used provolone in place of the mozzarella. YUM!"
"This recipe is really easy to make. After reading some of the reviews about flavor I decided to use Sun Dried tomatoes packed in olive oil, instead of the plum tomatoes. The flavor was phenomenal. My husband said "don't lose this one" haha"
"After a long winter this recipe sounded good. It was good ,however, the freshness of tomatoes were not like the summertime tomatoes."
"This is a recipe that I love to fix when we have guests. I looks and tastes fancy, but is not too hard to fix. Definitely a keeper."
"This was so easy to make and so good that I will definitely make this again. It looks like like it takes longer to make than it does."
"easy to make yet it looks like you spent a lot of time. Great for company. Delicious my husband loved it!"
"I love Caprese salad & this was a great idea, but tasteless. I would not make again."
"This is the easiest chicken recipe I think I've run across in a while. It was very tasty. As another reader wrote, I minced some garlic and used Italian seasoning and smoked apple bacon. I didn't use salt or pre-cook the bacon, instead I cut each raw piece in half and criss-crossed it on the chicken. A company-worthy recipe!"
"Oops! Forgot to mention, I, too, cooked the bacon in the microwave and it worked beautifully. For the person who thought this recipe was tasteless, perhaps, using the basil pesto would give it more flavor for you. Still, we think it a wonderful recipe!"
"This is one of our favorite chicken recipes. I've made it four times now. The first time I didn't have fresh basil, but do keep basil pesto in the freezer. I eliminated the olive oil and spread a couple tablespoons of pesto over the chicken then added the tomato slices and bacon. It was delicious. The last time, I was out of tomatoes and used some drained canned tomato chunks, not as good, but worked. I also split our chicken breasts in half horizontaly for the two of us so the baking time is cut to 15 to 20 minutes. This recipe is so versatile, easy and delicious, no wonder it is Contest Winning!"
"This was delicious and beautiful! Be careful not to overcook the bacon. Hubby doesn't care for tomatoes, so I left them off of his serving."
"Should I say what I really feel, or give this a Big Plus rating because it's a "prize winner"? Which is what I believe most of the reviewers must have done. I found this recipe flat, tasteless, utterly lacking in appeal. Sorry. I almost feel guilty speaking my mind on this, but if others agree, perhaps they'll know they're not the only ones."
"Very tasty and easy! Will make again."
"Everyone liked this recipe. Sent some home with family members and they said they enjoyed it just as much the next day."
"This was delicious. I made the recipe as written but wondered if it could be made in the microwave one breast at a time. I am single and am always eating leftovers from recipes like this. Anybody try it?"
"Very tasty and easy recipe. We enjoyed it. I used thick cut bacon. Will make again. Thanks for the recipe :)"
"This is a wonderful recipe. The chicken was moist and very flavorful. My family loved it. I cooked the bacon in the microwave for 2 minutes before placing on the chicken. It makes for a beautiful dish. Can't believe how quick and easy it was. I also flattened the chicken just a little to help it cook through."
"very tender, juicy and delicious!!!"
"I liked this recipe but I would not pre cook the bacon next time. Also, I think it needs more basil. I guess it's according to one's own taste."
"I tried this out tonight. Yum!!!! Absolutely delicious and it will become a frequent meal in our home. This will be a great entree for guests- I plan on making it again next week when my mom visits. Thankyou for such a tasty and even attractive addition to my menus!"
"Excellent! Had only thick-cut bacon on hand, so cooked it a bit longer before topping the chicken, also only had grape tomatoes so I halved those. Also looking to reduce the number of dishes so lined the baking sheet I used to cook the bacon with foil and then cooked the chicken on the same pan with the bacon grease--not particularly healthy, but very YUMMY!"
"Only problem of the 'Five Star' system .. is thee should be a '6th Star.' This would get one."
"I'm about 2 years late in reviewing this recipe. I first made it when I was 'Mommy sitting' my 90+ y.o. Mom.I made it as is, but inserted some garlic and added Italian seasoning along with the salt and pepper.I served it with hot buttered noodles. Mom started eating the noodles while I cut up some of the chicken for her. She then took a piece of chicken and she totally ignored the noodles, which she loves! So seldom have I seen her concentrate on only one item of food, but she did with this. She finally looked at me and said, "I can't eat any more!" We had the 're-dos', cold, for lunch the next day and the were amazing cold also!I've made this 'several many' times, and for Mom too, and I still totally enjoy it. It's a recipe that cannot be ignored - repeat, repeat, repeat!! TEN STARS!!!"
"Delicious! So fast & easy to make!"
"I was surprised at how tasty this was. And it was easy."
"I used boneless skinless thighs. Didn't have tomatoes so I used a can of diced garlic, basil roasted tomatoes and just omitted adding any more basil with the salt and pepper. Soooo delicious!! Family says it's a keeper and it was so easy to make."
"Very good! :D"
"Tastes and looks great! I make this for company and always get favorable reviews."
"So easy and good. Both kids (5 & 7) ate it although we just omitted the tomato for one of them. Wouldn't change a thing."
"Well received by kids and adults alike!"
"This tastes delicious and looks even more delicious! I used pre-cooked bacon to cut calories."
"Family really enjoyed it!"
"WOW - easy to make and FANTASTIC !!!"
"Making this with Heirloom tomatoes makes it absolutely amazing!!! makes such a different!! best chicken recipe I've ever had/made!!"
"Other than cutting down the bacon to one slice per chicken breast, I made this recipe as is. It's one of my favorites so far!"
"Tastes wonderful, but was a little too filling."
"We enjoyed this. However, I used thick bacon and it didn't wind up as crispy as we would have liked it, so next time we'll use a thinner bacon."
"This recipe was really yummy!! I seasoned the raw chicken w salt/pepper, and layered the tomatoes, then basil on raw chicken, then wrapped raw bacon around the chicken and baked (bacon seem side down) on a cookie sheet about 20-30 min at 375, til chicken was cooked through. Then broiled to make bacon more crispy for just a couple min. (no cheese on hand, so left it out) My husband said it was the best chicken hes ever had!"
"Loved it! Great for low carb diets! YUM!"
"Nice flavor with relatively simple ingredients."
"This was very good. Also used a regular tomato. This is a keeper."
