Heat the olive oil in a large saucepan over medium heat. Add the onion and cook until soft, 4 to 5 minutes. Add the garlic and cook one minute longer.

Stir in the cannellini beans, stock, salt, pepper, thyme and rosemary. Bring to a simmer, cover and cook for 15 to 20 minutes, stirring occasionally. Discard the thyme and rosemary. Stir in the lemon juice.

  • Make it more Mediterranean: Add in some cherry tomatoes, fresh parsley and Parmesan cheese to channel dinner along the Italian coast.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 cans (13.4 ounces each) no-salt-added cannellini beans, rinsed and drained
  • 1 cup unsalted chicken stock
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 fresh thyme sprigs
  • 1 fresh rosemary sprig
  • 1 teaspoon lemon juice

Directions
