Broccoli Slaw with Lemon Dressing Recipe

Our family absolutely loves broccoli, so I'm so happy there's finally a slaw mix in stores that uses broccoli stems. I like this slaw best after 20 minutes or so to allow the flavors to meld. —Donna Marie Ryan, Topsfield, Massachusetts
TOTAL TIME: Prep/Total Time: 15 min. YIELD:10 servings


  • 1/2 cup sour cream
  • 3 tablespoons lemon juice
  • 2 tablespoons mayonnaise
  • 1 tablespoon white wine vinegar
  • 2 teaspoons grated lemon peel
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1 package (12 ounces) broccoli coleslaw mix
  • 2 large red apples, juliennned


  • 1. In a large bowl, mix the first eight ingredients. Add coleslaw mix and apples; toss to coat. Refrigerate, covered, until serving. Yield: 10 servings.

3/4 cup: 79 calories, 4g fat (2g saturated fat), 9mg cholesterol, 152mg sodium, 9g carbohydrate (6g sugars, 2g fiber), 1g protein. Diabetic Exchanges: 1 fat, 1/2 starch.

"Unfortunately, neither my husband nor I liked this salad. He felt the apple, lemon and pepper flavors dominated too much, while I felt that, even after resting for an hour, the broccoli stems were just too tough. It may just be personal preference."

"I'm not sure what I did wrong but this was barely edible. The lemon was just way too overpowering. I skipped the apple but added in some sugar to counteract the lemon. I wound up putting a lot of sugar in, but despite this, it was just way to much. I probably won't make this recipe again."

"This is delicious. The last few times I have made this I added shredded chicken breast so it would be a one dish meal. Like the contributor said it is better after sitting for a while. It's also very versatile, once I swapped out the apple for pineapple tidbits and added some toasted sesame seeds for an Asian flair. However it doesn't make 10 servings, at least not in our house."

"This was good and the bagged mix made it really simple. I didn't have any mustard so I left it out, but I think it would have added a bit of spice to counter the sweetness. I also increased the mayo and decreased the sour cream slightly."

"very good. I didn't have a lemon so I used bottled juice. It was pretty lemony, but the apples really added a sweet flavor, giving the salad a sweet-sour taste!! An excellent recipe and we will use it again. I used the 16oz packaged slaw and there was plenty of dressing."
