Blueberry and lime are two of my favorite flavors, so I added blueberries to my favorite mixed drink! This recipe can easily be doubled or tripled. To make simple syrup, combine 1/2 cup sugar and 1/2 cup water and cook over medium heat until the sugar is dissolved. Simple syrup will keep in the fridge for a week.—Michele Tungett, Rochester, Illinois

Ingredients

  • 8 fresh blueberries
  • 8 fresh mint leaves
  • 1 cup ice cubes
  • 2 ounces white rum
  • 2 tablespoons fresh lime juice
  • 1 tablespoon simple syrup
  • 4 ounces club soda, chilled
  • Optional: Lime slice, mint sprig and additional fresh blueberries

Directions

  1. Add blueberries and mint leaves to a tall glass; muddle with the back of a wooden spoon. Fill the glass with ice cubes; add rum, lime juice and simple syrup. Top glass with club soda; mix well. If desired, garnish with lime slice, mint and blueberries.
