BLT Macaroni Salad Recipe
- 1/2 cup mayonnaise
- 3 tablespoons chili sauce
- 2 tablespoons lemon juice
- 1 teaspoon sugar
- 3 cups cooked elbow macaroni
- 1/2 cup chopped seeded tomato
- 2 tablespoons chopped green onions
- 3 cups shredded lettuce
- 4 Jones Dairy Farm Dry-Aged Bacon strips, cooked and crumbled
- 1. In a large bowl, combine the first four ingredients. Add the macaroni, tomatoes and onions; toss to coat. Cover and refrigerate. Just before serving, add lettuce and bacon; toss to coat. Yield: 6 servings.

"I omitted the sugar, and the chili sauce. I also used about a half cup of regular mayo, and about another half cup (didn't really measure anything!) of spicy mayo (we like ours with some zest) but you have to add more in volume because some of it gets soaked up by the macaroni. I just put in a squeeze or two of the lemon juice. Fresh scallions from the garden, cherry tomatoes halved, some sliced.....as well as swiss chard. After 3 days in the fridge, the chard has not wilted! Enjoy!"

"I haven't made this salad yet so I won't rate it. This is a comment prompted by the reviewer who said he/she used Sriracha sauce and cut back on it. I agree I wouldn't use 3 tablespoons of any kind of hot sauce in this recipe. I think the person who submitted this recipe meant the kind of chilli sauce that tastes like ketchup and that you can find next to the ketchup on the condiment aisle. That would make the dressing taste like that bottled, orange "French dressing," or the dressing you would make for a seafood salad like shrimp Louis. Anyway, that's how I going to make it when I have an occasion to do so."

I used the crumbled bacon for salads you buy in the store, wouldn't do that again, go freshly prepared. Roma tomatoes to avoid seeding. I used 2TBSP instead of the 3 called for and increased the Mayo to counteract the hotter heat. I also had a log of Goat cheese in my Fridge that needed to be used so I added that too, which provided an extra creamy touch to the dish. It really was a terrific recipe both fresh and leftover. I warm it slightly in the microwave so that the lettuce isnt so wilted and it is phenomenal."
