Blaukraut is an authentic German dish and it's super simple to make. My mother used to make this blaukraut recipe for my family growing up. Now, it's become one of our most popular German sides in our restaurant, Bavarian Inn! —Dorothy Zehnder, Frankenmuth, Michigan

Ingredients

  • 6 ounces bacon strips, chopped
  • 1 medium onion, chopped
  • 1/4 teaspoon liquid smoke, optional
  • 2 pounds red cabbage (about 1 medium head), shredded
  • 3-1/4 cups water
  • 1-1/2 cups white vinegar
  • 1 medium apple, sliced
  • 1 cup sugar
  • 1-1/4 teaspoons salt

Directions

  1. In a Dutch oven, cook bacon over medium heat for 5 minutes. Add onion; cook and stir until tender, 6-8 minutes. If desired, stir in liquid smoke.
  2. Add cabbage, water, vinegar, apple, sugar and salt. Bring to a boil; reduce heat. Simmer, covered, until cabbage is crisp-tender, about 20 minutes, stirring every 10 minutes. Serve with a slotted spoon.
