I based this recipe on my corn fritters, using berries instead of corn, and they turned out beautifully! They have the texture of a funnel cake, with the extra flavor of fresh fruit. I feel as though I’m at a carnival when I eat these little jewels. —Lisa Renshaw, Kansas City, MO

- 2 cups all-purpose flour
- 1/2 cup sugar
- 2-1/2 teaspoons baking powder
- 1 teaspoon salt
- 2 large eggs
- 3/4 cup lemon-lime soda
- 1-1/2 cups fresh blackberries
- Oil for deep-fat frying
- Confectioners' sugar
- In a large bowl, whisk flour, sugar, baking powder and salt. In another bowl, whisk eggs and soda until blended. Add to dry ingredients, stirring just until moistened. Fold in blackberries.
- In an electric skillet or deep fryer, heat oil to 375°. Drop batter by tablespoonfuls, a few at a time, into hot oil. Fry 2-3 minutes or until golden brown, turning occasionally. Drain on paper towels. Dust with confectioners' sugar.
