Black Beans with Bell Peppers & Rice

My meat and potatoes husband goes for this cheesy, hearty black beans and rice recipe, and the kids gobble it up. For extra kick, add a splash of hot sauce. —Stephanie Lambert, Moseley, Virgina

This was so yummy! I ate mine with tortilla chips. My daughter wrapped it into flour tortillas. I did add a can of unsalted corn, as it seemed to be saying "add corn!"

I found this super quick and easy. I’m glad I read the other comments because I was worried about the lack of spices used. I added a pouch of taco seasoning once I mixed the beans and rice in. Then my husband and I added as much hot sauce as we liked and a squeeze of fresh lime and it was amaaaaaazing. I should mention I didn’t have the Mexican cheese, just marble, so maybe it wouldn’t have needed the additional spices if I had the right cheese. My 4 year old loved it, we will definitely be made again. Thank you for sharing!

Tasty, delicate seasonings. I had two red peppers and a yellow pepper, so that's what I used.

This meal was a very quick, cheap, and easy to put together. That was the plus about it. But for my family's preference we did not prefer this as a meal. My husband and I agreed it needed more flavor. We added hot sauce to it and that made it very delicious. My husband also thinks this would be great with cooked steak chopped up in it.

This was yummy! I did not have fresh cilantro so I added extra cumin, oregano and salt.
