Ingredients

  • 2-1/4 cups all-purpose flour
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter
  • 1/2 cup buttermilk
  • 1/4 cup finely chopped bread and butter pickle slices
  • CHEESE SPREAD:
  • 1 cup shredded cheddar cheese
  • 1/3 cup mayonnaise
  • 2 tablespoons finely chopped bread and butter pickle slices
  • 1/2 teaspoon mustard seed
  • 1/4 teaspoon pepper

Directions

  1. Preheat oven to 450°. In a large bowl, whisk flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Add buttermilk and pickles; stir just until moistened.
  2. Turn onto a lightly floured surface; knead gently 8-10 times. Pat or roll dough to 1/2-in. thickness; cut with a floured 2-in. biscuit cutter. Place 2 in. apart on a parchment-lined baking sheet. Bake until golden brown, 8-10 minutes.
  3. Meanwhile, combine cheese spread ingredients. Serve with biscuits.
