Best-Ever Grilled Cheese Sandwiches Recipe

For a classic grilled sandwich, this recipe is the best. You can also use your imagination for other fillings, such as a sprinkle of Parmesan cheese, Italian seasoning, chives or even a tiny spoonful of salsa. —Edie DeSpain, Logan, Utah
TOTAL TIME: Prep/Total Time: 20 min. YIELD:2 servings


  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 4 slices sourdough bread
  • 2 slices Swiss cheese
  • 2 slices cheddar cheese
  • 2 slices sweet onion
  • 1 medium tomato, sliced
  • 6 cooked Jones Dairy Farm Dry-Aged Bacon strips
  • 2 tablespoons butter, softened


  • 1. Combine mayonnaise and mustard; spread over two bread slices. Layer with cheeses, onion, tomato and bacon; top with remaining bread. Spread outsides of sandwiches with butter.
  • 2. In a small skillet over medium heat, toast sandwiches for 2-3 minutes on each side or until cheese is melted. Yield: 2 servings.

"We made this three days ago for Girl's Friday Night and the sandwiches were great hit with everyone! We had a lot of leftover meats and cheeses from a food day at work and so we made a variety of these sandwiches with different meats using a paninni sandwich maker to grill them. One of my friends even sprinkled garlic and Italian seasoning on the butter for grilling. Great idea! Thanks for the good recipes, TOH!"

"Good stuff, mix in what you prefer. The mayo & mustard give a nice tang that reminds me of a deviled egg, my favorite. BTW if you have one, dust off your George Foreman grill to press the sandwiches. It works amazing...I don't use them for cooking anything else. No need to butter the bread, just swipe the griddle with butter & you're good to go. Crunchy outside & gooey inside. Yummo. Thanks TOH & the OP for taking a simple grilled cheese & helping me think outside the box."

"I've been making various grilled cheese sandwiches based on this for 50 years. The secret is DON'T use American cheese. Use a couple of good quality cheeses and the tang of the mustard and mayonnaise give it that extra "oomph". You can add and subtract ingredients to your taste and you can't go wrong."
