Ingredients

  • 3 tablespoons seedless raspberry jam
  • 2/3 cup canola oil
  • 1/3 cup red wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

Place jam in a small microwave-safe bowl. Microwave, uncovered, on high for 10-15 seconds or until melted. Whisk in the oil, vinegar, salt and pepper. Store in the refrigerator. Yield: 1 cup.

"Make this quite often not too sweet and with a seedless jam no complaints from the young set about seeds. Excellent with other vinegars as well; our favorite with this recipe is pomegranate vinegar."

"This was not as sweet as most berry vinaigrettes I've tried, plus a tad too salty. It tasted much like a plain vinaigrette. But if you like your berry vinaigrettes not too sweet, then try this one."
