Berry Applesauce Gelatin

Ingredients

  • 1 package (6 ounces) strawberry gelatin
  • 1 cup boiling water
  • 2 cups frozen unsweetened strawberries
  • 2 cups applesauce
  • 2 tablespoons lemon juice

Directions

  • 1. In a bowl, dissolve gelatin in boiling water. Stir in the strawberries until thawed and separated. Add the applesauce and lemon juice; mix well. Pour into an 11x7-in. pan; chill until set.

    This has been my son's favorite since 1998! I make this for him for holidays since he doesn't like cranberries. Sometimes I use unsweetened applesauce and leave out the lemon juice. Tastes great with sugar-free gelatin also. Most of the time this does not set up hard like regular gelatin; it is more gel-like.

    Perfect! Such a pretty rosy color, and I had all of the ingredients on hand, It is lighter than the ususal jello type dish, and I used a natural gelatin for my special needs. The frozen berries will make this set up much quicker than traditional jello. Based on a previous review, I added 1/2 tsp unflavored geletin to the mix. So happy to found this one

    For some reason, this didn't gel for me. I followed the recipe, so I'm not sure exactly what happened. It sort of thickened up, but it didn't set. Other than that, this was delicious. I used unsweetened applesauce and sugar free gelatin and it tastes wonderful. I will definitely make it again!
