My standby meatloaf recipe was handed down from my grandmother, so to step out of the box, I tried this recipe. It was flavorful and easy enough to prepare. I did reduce the dried thyme to a 12 tsp. and used all ground beef, and reduced the only by half. The shredded potato was a nice filler.

I like onions, but this was just too many for me. 1/2 an onion would have been plenty. Overall, I wasn't impressed with this recipe.
