BBQ Pork & Peppers

This was the first recipe I ever made in a slow cooker, and it was the first recipe my husband taught me! We like this with white rice and a salad. —Rachael Hughes, Southampton, Pennsylvania

Ingredients

  • 4 bone-in pork loin chops (7 ounces each)
  • 1 large onion, chopped
  • 1 large sweet red pepper, chopped
  • 1 large green pepper, chopped
  • 1 cup barbecue sauce
  • Chopped fresh parsley, optional

Directions

  • Place chops in a 4-qt. slow cooker coated with cooking spray. Top with onion, peppers and barbecue sauce. Cover and cook on low 8-10 hours or until pork is tender. If desired, top with chopped fresh parsley.

    I made it today for the second time. Had boneless thick in the freezer so that is what I used. Just two of us so I cut the recipe in half. Shredded the chops on our plates and mixed the sauce with the shredded meat. This is a keeper, could be served with Kaiser rolls as well. I made Scored Potatoes as a side dish. Also a TOH recipe. They turned out great as well.

    This was also my first slow-cooker recipe and it was delicious! With only two of us, it was easy to divide by two.

    Next time I might sear those chops just a bit prior to putting them in the slow cooker. And I may put them on top of the veggies rather than underneath.

    Delicious! Chops were moist and tender. Next time I will add some minced garlic and a can of pineapple chunks, because...well...garlic and pineapple! Thank you, Rachael!
