Ingredients

  • 2 pounds Brussels sprouts, halved
  • 6 bacon strips, chopped
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons pine nuts
  • 2 teaspoons minced fresh oregano
  • 2 tablespoons balsamic glaze
  • 2 tablespoons freshly shaved Parmesan cheese

Directions

  1. Preheat oven to 450°. In a large bowl, toss Brussels sprouts, bacon, olive oil, salt and pepper. Transfer to a 15x10x1-in. baking sheet. Roast, stirring halfway through cooking, until sprouts are tender and lightly browned, 20-25 minutes.
  2. Meanwhile, in a small skillet or saucepan, heat the extra virgin olive oil over low heat. Add pine nuts; cook until fragrant and nuts start to brown, 3-4 minutes. Remove from heat; mix in oregano. Transfer Brussels sprouts to a serving bowl; add pine nut mixture and toss to coat. Drizzle Brussels sprouts with balsamic glaze and sprinkle with Parmesan; serve warm.
Roasted Balsamic Brussels Sprouts with Bacon Tips

How should you clean and cut the Brussels sprouts before roasting?

To clean and cut the Brussels sprouts before roasting, start by trimming and discarding the ends. Rinse the sprouts in a large bowl of cold water. Drain and pat dry; and cut in half, top to bottom.

How can you make sure your Brussels sprouts roast evenly?

To make sure your Brussels sprouts roast evenly, toss generously with oil, then place cut side down in a single layer on a large baking sheet. Don’t overcrowd the pan—otherwise, the sprouts will steam instead of roast. Bake the Brussels sprouts at a high temperature (between 400° and 450°F is ideal) on a rack in the upper third of your oven.

How can you make roasted balsamic Brussels sprouts your own?

There are many ways you can make roasted balsamic Brussels sprouts your own. Toss them with cranberries and walnuts, mix them with bacon and blue cheese, or pair them with sriracha aioli. Another idea is to serve the sprouts as one-bite snacks! If you liked this recipe, check out more Brussels sprouts recipes.
