Baked Sweet Onion Rings

1/2 cup egg substitute

2/3 cup dry bread crumbs

1/2 teaspoon salt

1/4 teaspoon pepper

1 sweet onion, sliced and separated into rings
Directions

Place egg substitute in a shallow dish. In another shallow dish, combine the bread crumbs, salt and pepper. Dip onion rings into egg, then roll in crumb mixture.

Place on a baking sheet coated with cooking spray. Bake at 425° for 15-18 minutes or until golden brown, turning once.
