- 1 pound Jones No Sugar Pork Sausage Roll sausage
- 1 medium apple, peeled and chopped
- 1 medium onion, chopped
- 1/2 cup chopped celery
- 3 cups cooked long grain rice
- 1/2 cup raisins
- 1/3 cup minced fresh parsley
- 1 tablespoon brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon pepper
- In a large skillet, cook the sausage, apple, onion and celery over medium heat until meat is no longer pink; drain. Stir in the remaining ingredients.
- Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 25-30 minutes or until heated through. Yield: 4-6 servings.

"This dish is amazing! My family demands it every Thanksgiving as a side. It tastes best when the rice is firmer in texture. I usually prepare the rice ahead of time in a rice cooker. Brown rice is equally delicious. I think I'll try it with quinoa, just to see if it is as tasty. Enjoy!"
"I took others' advice and did half the brown sugar. Since I only had dried parsley, I did the conversion, which would've made it about 5 tsp. That seemed like a lot so I only did 3 tsp. I also lowered the amount of onion (personal preference). I used craisins instead of raisins. I only used 2.5 C of rice (all I had left). I don't normally change a recipe so much but these seemed like minor changes in the overall grand scheme. We LOVED this. "Autumn Sausage casserole" is a very apt name. We thought it was a tad dry, but not overly dry. Not sure how to fix the dryness issue, but we're still going to make this again either way!"
"I almost forgot the brown sugar too, Kimb0! I added about half of the brown sugar, and both my husband and I liked it better without it. I think the sweetness of the raisins was enough. (I used a mix of raisins, golden raisins and dried cherries.) We really enjoyed this recipe because it was so different. I served it with the Fresh Tomato Basil Tart also from TOH."

"This is a family favorite in our house! I usually substitute carrots for the celery and add peppers. I also sometimes will switch out craisins for the raisins. SO yummy. Flavors are very warm and not too sweet."
