Apricot Cooler

A mingling of apricot, pineapple and lemon flavors make this soothing sipper so refreshing. I first tried it years ago at an outdoor wedding shower. It's the perfect complement not just for Easter but for any spring luncheon or buffet. —Julie Peterson, Crofton, Maryland

  • 1 can (12 ounces) frozen lemonade concentrate
  • 1-1/2 cups cold water
  • 3 cups apricot nectar
  • 3 cups unsweetened pineapple juice
  • 2 cans (12 ounces each) lemon-lime soda, chilled
  • Lemon slices
  • Ice cubes


  • In a large pitcher, mix lemonade concentrate and cold water. Stir in nectar, pineapple juice, soda and lemon slices. Serve over ice.
