Apricot-Chipotle Cheese Spread


  • 12 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 garlic cloves, minced
  • 1/2 teaspoon onion powder
  • 1/2 cup apricot preserves
  • 3 teaspoons minced fresh gingerroot
  • 3 teaspoons minced chipotle peppers in adobo sauce
  • Assorted crackers and vegetables


  • 1. In a large bowl, beat cream cheese, cheddar cheese, garlic and onion powder until blended. Shape cheese mixture into a log. Wrap in plastic; refrigerate at least 2 hours.
  • 2. In a small bowl, mix preserves, ginger and chipotle peppers until blended. Spoon over cream cheese. Serve with crackers and vegetables.
