Apricot Cashew Clusters Recipe

Guests will enjoy the fruity surprise they find in these scrumptious nut candies. "I make them often because they can be whipped up in no time," says Pamela Wagner. "Everyone will love the unusual combination," promises the Madison, Wisconsin cook.
TOTAL TIME: Prep/Total Time: 30 min. YIELD:30 servings


  • 1 package (11-1/2 ounces) milk chocolate chips
  • 1 cup chopped dried apricots
  • 1 cup chopped salted cashews


  • 1. In a microwave or double boiler, melt the chocolate chips; stir until smooth. Stir in apricots and cashews. Drop by rounded tablespoonfuls onto waxed paper-lined baking sheets. Chill until set, about 15 minutes. Store in an airtight container. Yield: 2-1/2 dozen.

"I made these and just used 12-oz. package of these Make & Mold chocolate cr?me candy wafer disks. I'd also used 1 Tbsp. vegetable shortening. The apricots and cashews I'd kept as is. I used a double boiler to melt candy wafers/shortening. I was able to get 33 candies as I used 2 teaspoons to drop candy mixture onto the prepared baking sheets and chilled the candies until firm/set. This recipe was used for this week's Ingredient Challenge: Apricots! delowenstein"
