Apple Pear Cake

When my sister Catherine made her apple cake for me, I knew I needed the recipe. For my version, I added some pears from the trees on our acreage. The resulting apple-pear cake is so moist and tastes so good. Now every time I make it, people want my recipe. —Mary Ann Lees, Centreville, Alabama
Ingredients

2 cups shredded peeled tart apples

2 cups shredded peeled pears

2 cups sugar

1-1/4 cups canola oil

1 cup raisins

1 cup chopped pecans

2 large eggs, lightly beaten

1 teaspoon vanilla extract

3 cups all-purpose flour

2 teaspoons baking soda

2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

CREAM CHEESE FROSTING:

3 ounces cream cheese, softened

3 cups confectioners' sugar

1/4 cup butter, softened

2 tablespoons 2% milk

1/2 teaspoon vanilla extract

In a large bowl, combine the first 8 ingredients. Combine dry ingredients; stir into the fruit mixture.

Pour into a greased 13x9-in. baking pan. Bake at 325° until a toothpick inserted in the center comes out clean, about 1 hour. Cool completely on a wire rack.

For frosting, in a large bowl, beat the cream cheese, confectioners' sugar and butter until smooth. Beat in the milk and vanilla; frost cake. Store in the refrigerator.
