Ingredients

  • 2 teaspoons unsweetened apple juice
  • 1 teaspoon water
  • 1 teaspoon rice vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon olive oil
  • 1/4 teaspoon sugar
  • 1/4 teaspoon Dijon mustard
  • 1/8 teaspoon salt
  • Spring mix salad greens
  • Assorted fresh fruit

Directions

  1. In a small bowl, whisk the first 8 ingredients. Drizzle over greens and fruit.

How do you store apple vinaigrette?

You can refrigerate homemade vinaigrettes such as this one for up to 2 weeks if it's covered tightly. Simply shake well before serving. You also might want to microwave it for a few seconds or let it come up to temperature so the olive oil liquifies.

Can you substitute other kinds of vinegar for the rice vinegar?

Yes! We love seasoned rice vinegar for making homemade sushi rice and adding a tart accent to winter squash recipes. But we also use it for recipes that call for white wine vinegar and champagne vinegar, so those are easy and natural swap-ins if you don’t have rice vinegar. Apple cider vinegar also makes sense in this recipe.
