Apple Juice Vinaigrette

  • 2 teaspoons unsweetened apple juice
  • 1 teaspoon water
  • 1 teaspoon rice vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon olive oil
  • 1/4 teaspoon sugar
  • 1/4 teaspoon Dijon mustard
  • 1/8 teaspoon salt
  • Spring mix salad greens
  • Assorted fresh fruit


  • In a small bowl, whisk the first eight ingredients. Drizzle over greens and fruit.

    This was a very good dressing served over the spring greens, blackberries, strawberries, blueberries and cantaloupe as pictured. I would recommend a separate salad plate as it is a very thin dressing.

    Finally! A low-calorie homemade salad dressing! This has a great, sweet-tangy flavor. Will definitely make again.
