Apple Caramel Cheesecake Bars Recipe

It's a caramel apple, cheesecake and streusel-topped apple pie all rolled into one irresistible dessert. If you can’t resist a “taste test” before a party, just arrange them on a serving platter and no one will know a piece is missing from the pan! —Katherine White, Clemmons, North Carolina

  • 2 cups all-purpose flour
  • 1/2 cup packed brown sugar
  • 3/4 cup cold butter, cubed
  • 2 packages (8 ounces each) cream cheese, softened
  • 1/2 cup plus 2 tablespoons sugar, divided
  • 1 teaspoon vanilla extract
  • 2 large eggs, lightly beaten
  • 3 medium tart apples, peeled and finely chopped
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 cup quick-cooking oats
  • 1/3 cup cold butter, cubed
  • 1/3 cup hot caramel ice cream topping


  • 1. Preheat oven to 350°. In a small bowl, combine flour and brown sugar; cut in butter until crumbly. Press into a well-greased 13x9-in. baking pan. Bake 15-18 minutes or until lightly browned.
  • 2. Meanwhile, in a large bowl, beat cream cheese, 1/2 cup sugar and vanilla until smooth. Add eggs; beat on low speed just until combined. Spread over crust.
  • 3. In a small bowl, toss apples with cinnamon, nutmeg and remaining sugar; spoon over cream cheese layer. In another bowl, mix flour, brown sugar and oats; cut in butter until crumbly. Sprinkle over apple layer.
  • 4. Bake 25-30 minutes or until filling is set. Drizzle with caramel topping; cool in pan on a wire rack 1 hour. Refrigerate at least 2 hours. Cut into bars. Yield: 3 dozen.

"Everyone loved these bars. I did use 3 large apples. I will definitely make again! Next time I might make the bottom crust a little thinner and maybe try adding a little cinnamon to the crust and streusel as another suggested. Yummy even without the caramel."

"Very good foundation recipe and the perfect size for parties. I made these yesterday. Quite a process. I am a very experienced baker and very organized in the kitchen. My processes go quickly and cleanly. This was a lengthy process for me. Maybe it was just an off day :( ....we all have them. I followed the recipe to a "t" after reading all the reviews. I shared the finished bars with the families of two of my sons. All, along with myself and my husband, felt that there could have been more flavor...more of an apple pie spice type flavor and definitely more apples. Would I make them again.....yes, but I would add cinnamon to both the crust and the streusel and would add an extra apple or two. I'm not sure the caramel made much difference to taste or texture except to add additional calories."

"Made this recipes substituting for the apples, 4C of chopped zucchini, core removed and peeled, then chopped. I tossed the chopped zucchini with a little sugar, and let it drain in a colander for about 30 minutes, just to pulled out some of the moisture. No one knew it wasn't apples, and loved it! Great way to use up some of summer's bounty. Will make this again with apples when all my zucchini are gone."

"First let me say i was having one of those days and put these in the oven for a few minutes before i realized the cheesecake filling was still in the bowl. After scraping as much of the topping as i could and putting the cheesecake on the apples i took it to a family party without trying it. I let everyone know i didnt know what it was going to taste like, it was a huge hit. Some took 2 pieces. No issue with the crust which i baked for 15 mins,( could be because the apples were on top of it. Great recipe, next time i hope to make it the way it is written."

"I debated whether to make these bars or not because I really don't care for crispy apples in baked goods when there isn't enough baking time to get them done. I decided to go ahead and bake these bars and I'm so glad I did. They are delicious! I did grate the apples, (Granny Smith) instead of thinly chopping and this worked out perfect and the apples were NOT crispy. Just right! Yum! I followed some of the other reviews and baked the crust for 10 minutes instead of the 15-18 minutes. I did not measure the caramel topping. I just drizzled almost half of a 12.25oz. jar of Smuckers Caramel Ice Cream topping. I served these bars at coffee hour after church and i received many compliments. Thank you for sharing your delicious recipe!"

"These did take a little extra time to make, but so worth it. My friends just adored these! My crust was perfect, but I know my oven. Always set the timer 2 minutes less than the minimum bake time. "These were a lot of trouble, quite expensive, and not as good as I had expected. I did use Neufchâtel instead of cream cheese which should not have affected the flavor, only the consistency perhaps. My gala apples did not get soft, were crunchier than I expected or preferred, and I now read not a good choice for cooking so that was perhaps a bad choice on my part. I doubt that I make them again but the next time I would definitely pay attention to the baking quality of the apple variety! I have a number of less labor intensive recipes that produce better results to warrant making these again."
