Ambrosia Pecan Pie Recipe
- 3 eggs
- 3/4 cup light corn syrup
- 1/2 cup sugar
- 3 tablespoons brown sugar
- 3 tablespoons orange juice
- 2 tablespoons butter or margarine, melted
- 1 teaspoon grated orange peel
- 1/8 teaspoon salt
- 1-1/2 cups chopped pecans
- 2/3 cup flaked coconut
- 1 unbaked pastry shell (9 inches)
- 1. In a large mixing bowl, beat eggs, corn syrup, sugars, orange juice, butter, orange peel and salt until well blended. Stir in pecans and coconut. Pour into pastry shell. Bake at 350° for 50-60 minutes or until a knife inserted near the center comes out clean. If edges become too brown, cover with foil. Cool on a wire rack. Yield: 8 servings.
