Ingredients

  • 2 medium zucchini
  • 1 cup panko bread crumbs
  • 3/4 cup grated Parmesan cheese
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground chipotle pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup all-purpose flour
  • 2 large eggs, beaten
  • Cooking spray

Directions

  1. Preheat air fryer to 400°. Cut each zucchini in half lengthwise and then in half crosswise. Cut each piece lengthwise into 1/4-in. slices.
  2. In a shallow bowl, mix bread crumbs, cheese and seasonings. Place flour and eggs in separate shallow bowls. Dip zucchini slices in flour, then in egg and then in crumb mixture, patting to help coating adhere.
  3. In batches, place zucchini on greased tray in air-fryer basket; spritz with cooking spray. Cook until golden brown, 8-10 minutes, flipping halfway.

For crispy results, make sure to layer your fries in a single layer so they crisp up just right. Pat your zucchini fries dry before adding the coating, or after to remove excess coating, which prevents sogginess.
