Instead of french fries with my burgers and sandwiches, I love to serve these air-fryer zucchini fries. They're crispy, delicious and a wonderful way to use up the zucchini from my garden. —Matthew Hass, Ellison Bay, Wisconsin

  • 2 medium zucchini
  • 1 cup panko bread crumbs
  • 3/4 cup grated Parmesan cheese
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground chipotle pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup all-purpose flour
  • 2 large eggs, beaten
  • Cooking spray

  1. Preheat air fryer to 400°. Cut each zucchini in half lengthwise and then in half crosswise. Cut each piece lengthwise into 1/4-in. slices.
  2. In a shallow bowl, mix bread crumbs, cheese and seasonings. Place flour and eggs in separate shallow bowls. Dip zucchini slices in flour, then in egg and then in crumb mixture, patting to help coating adhere.
  3. In batches, place zucchini on greased tray in air-fryer basket; spritz with cooking spray. Cook until golden brown, 8-10 minutes, flipping halfway.
