A.M. Delight Muffins

We've been making these muffins daily since we opened back in 1987. The recipe is a combination of our favorites from home. We bake at least 30 dozen muffins for the shop every morning.—Anne Maher, Rockland, Maine

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 teaspoons baking soda
  • 1-1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 3 eggs
  • 1/2 cup canola oil
  • 1/2 cup milk
  • 1-1/2 teaspoons vanilla extract
  • 2 cups chopped peeled apples
  • 2 cups grated carrots
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup raisins
  • 1/2 cup sliced almonds

Directions

  • In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. In another bowl, beat eggs; add oil, milk and vanilla. Mix well; stir into dry ingredients just until moistened. Fold in the remaining ingredients. Fill greased or paper-lined muffin cups three-fourths full. Bake at 375° for 20-25 minutes or until muffins test done.

    A very tasty and healthy grab-and-go breakfast! I made a few substitutions: peanut oil and walnuts, as these are the ingredients I always have on hand, and spelt flour because it makes for an amazing, nutty flavour!

    A nice, moist muffin with good texture. I subbed chopped pecans because I had them on hand. I like that it isn't overly sweet. However, I was expecting more flavor. Next time I might try toasting the nuts and adding a little ginger or cloves with the cinnamon to spice it up a bit.

    Excellent muffins for breakfast. Moist and delicious. I shared with friends. They loved it and asked for more. I will definitely make them again.

    I've made these several times. They're always moist and way too good to believe they're nutritious. Soy milk actually tastes better than normal milk in this recipe.

    A lovely muffin!I soaked the raisins in hot water draining before adding. I shredded the apple & carrot with a medium size grate. I used 1 cup whole wheat & 1 cup all purpose flour. I also used 6 tablespoons each brown & granulated sugar. Thanks for sharing.

    This was nice flavor, but next time I'll try adding some crushed or tidbit pineapple to add a bit more moisture.
