"A nice, moist muffin with good texture. I subbed chopped pecans because I had them on hand. I like that it isn't overly sweet. However, I was expecting more flavor. Next time I might try toasting the nuts and adding a little ginger or cloves with the cinnamon to spice it up a bit."

"A very tasty and healthy grab-and-go breakfast! I made two substitutions (peanut oil and spelt flour) but otherwise followed the recipe exactly."

"I've made these several times. They're always moist and way too good to believe they're nutritious. Soy milk actually tastes better than normal milk in this recipe."

"A lovely muffin!

I soaked the raisins in hot water draining before adding. I shredded the apple & carrot with a medium size grate. I used 1 cup whole wheat & 1 cup all purpose flour. I also used 6 tablespoons each brown & granulated sugar. Thanks for sharing."

"This was nice flavor, but next time I'll try adding some crushed or tidbit pineapple to add a bit more moisture."
