"A very tasty and healthy grab-and-go breakfast! I made a few substitutions: peanut oil and walnuts, as these are the ingredients I always have on hand, and spelt flour because it makes for an amazing, nutty flavour!"

"A nice, moist muffin with good texture. I subbed chopped pecans because I had them on hand. I like that it isn't overly sweet. However, I was expecting more flavor. Next time I might try toasting the nuts and adding a little ginger or cloves with the cinnamon to spice it up a bit."

"I've made these several times. They're always moist and way too good to believe they're nutritious. Soy milk actually tastes better than normal milk in this recipe."

"A lovely muffin!

I soaked the raisins in hot water draining before adding. I shredded the apple & carrot with a medium size grate. I used 1 cup whole wheat & 1 cup all purpose flour. I also used 6 tablespoons each brown & granulated sugar. Thanks for sharing."

"This was nice flavor, but next time I'll try adding some crushed or tidbit pineapple to add a bit more moisture."
