Ingredients

  • 2 medium apples, peeled and chopped
  • 1 cup sugar
  • 1 cup fresh cranberries
  • 1/2 cup wheat berries
  • 1/2 cup quinoa, rinsed
  • 1/2 cup oat bran
  • 1/2 cup medium pearl barley
  • 1/2 cup chopped walnuts
  • 1/2 cup packed brown sugar
  • 1-1/2 to 2 teaspoons ground cinnamon
  • 6 cups water
  • Milk, brown sugar, chopped nuts and apple slices, optional

Directions

  1. In a 6-qt. electric pressure cooker, combine the first 11 ingredients. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 25 minutes. Allow pressure to naturally release for 10 minutes, then quick-release any remaining pressure. Serve with optional ingredients as desired.
Sugared Cranberries
Heat 3 tablespoons light corn syrup in microwave until warm; gently toss with 1 cup fresh or frozen cranberries, allowing excess syrup to drip off. Toss in 1/3 cup sugar to coat. Place on waxed paper; let stand until set, about 1 hour.
