7 egg whites
140 g (5 oz) granulated sugar
140 g (5 oz) Wondra flour (see notes)
125 g (4.5 oz) butter, melted
100 g (3.5 oz) bitter-sweet cooking chocolate, chopped into chip size (see notes)
100 g (3.5 oz) nuts, chopped (filberts best, but walnuts or pecans are also good)
lemon zest from one lemon
Preheat the oven to 350 F.
Beat the egg whites until stiff. Mix in the sugar, then alternately fold in the Wondra flour and melted butter. Add the coarsely chopped chocolate, nuts, and lemon peel.
Pour batter into a greased and floured long loaf pan (use all-purpose flour to flour the pan). Or use 2 regular loaf pans. Bake for about 30 mins or until a toothpick comes out clean.
