Pumpkin Peeling

I’ve found a great way to peel a pie pumpkin. Cut the pumpkin in half, and scoop out the insides. Microwave each half, cut side down, until tender. Holding the pumpkin with oven mitts, scoop the softened pulp into a bowl and let the pumpkin cool before adding to other pie ingredients. —Nancy Gresh, Ebensburg, Pennsylvania
