Just Enough Juice Concentrate

I always keep cans of frozen orange juice concentrate and pineapple juice concentrate in the freezer. When a recipe calls for a small amount of juice, it’s simple to make since the ratio to reconstitute the juice is 3 parts water to 1 part concentrate. (If a recipe calls for 1/4 cup juice, I mix 3 tablespoons water with 1 tablespoon concentrate.) The concentrate doesn’t freeze hard, so it’s easy to scoop out. Once the can is opened, I keep the whole container in a resealable plastic bag. —Peggy S., Hot Springs Village, Arkansas
