Ramen Noodle Rice

If you ever use ramen noodles for recipes, you probably have one or two of those extra seasoning packets leftover. To use one up, I make this simple rice dish. I heat 1 tablespoon of oil or butter in a saucepan, then stir in 1/3 cup uncooked long grain rice and the contents of the seasoning packet. I add 2/3 cup of chicken broth and cover the pan. I simmer the rice for 15 minutes without lifting the lid, then turn off the heat and let it sit until the liquid is absorbed.
