Leftovers for Quesadillas

I use up leftover chicken or brisket to make quesadillas. I butter one side of two tortillas and place one in a skillet butter side down. Then I layer it with canned refried beans, the leftover meat and shredded cheese. I top it with the second tortilla (butter side up) and cook until the tortillas are lightly brown. I use a pizza cutter to cut the quesadilla into four or six wedges. Delicious! —Kate B., Duncanville, Texas
