Mashed Potatoes with Peels

My family loves mashed potatoes. But I never like peeling the potatoes, so I rarely made them. Then I decided to leave the peels on. I simply clean the potatoes, cook them and mash them—peels and all. My family is thrilled with them. The potatoes are more nutritious and so easy to prepare that I serve them regularly.
