Cutting Cholesterol in Egg Recipes

My mother shared an idea for cutting cholesterol in our favorite egg recipes. It works well when preparing egg salad. If an egg salad recipe calls for eight hard-cooked eggs, use four whole hard-cooked eggs and four hard-cooked egg whites instead. By removing the yolks from half of the eggs, you are decreasing cholesterol but not flavor. We also use this trick when making scrambled eggs. Michele S., Stratford, New Jersey
