How-to Use Cedar Planks for Grilling
You can purchase packages of grill-ready cedar, maple, and cherry or apple wood planks at grocery, hardware, specialty and kitchen stores. Another option is to buy untreated planks at a lumberyard and cut them into 1-inch thick sections. (Never cook with wood that has been chemically treated.) To prevent the wood from burning while grilling, first immerse the plank in water and let it soak for several hours or overnight. (You may have to weigh it down with a soup can.) For even more flavor, add white wine, beer, apple cider or fresh herbs to the water. When ready to cook, dry off the plank and grill as the recipe directs. Remove the cooked food from the plank. Let the plank cool on the grill grate before removing.
