Whipped Cream on the Go

Is there a way I can make whipped cream that's spread on a pie stiff enough to travel well? —J.K., Sleepy Hollow, Illinois

To stabilize whipped cream, try adding a little gelatin. Soften 1/2 teaspoon unflavored gelatin in 1 tablespoon cold water in a heatproof glass measuring cup; let stand for 5 minutes. Heat the gelatin (in the cup) in a pan of simmering water on the stovetop or in the microwave just until melted. Cool until mixture is warm. Allowing it to cool too much can cause little pieces of gelatin to form in the cream. Beat 1 cup whipping cream until soft peaks form. Add the gelatin mixture and desired amount of sugar; beat until thickened.
